Oven Ready S’mores Cookie Dough

Is there anything more nostalgic than a S’mores? For me, nostalgia plays a heavy role in BAKR and our recipe and flavor ideation and formulation. It is such a powerful feeling and every time I eat something that reminds me of childhood, it is like I am teleported back in time and can relive the happy memories that come with the flavor and it is such a comforting experience. And let me tell you…this S’mores cookie is like putting a cozy blanket on and taking a trip down memory lane to all the late night bonfires with friends and family. I think that is why I like S’mores so much…it feels like home. Well that, and the fact that the combination of a honey graham, gooey chocolate chunks, and marshmallows is top tier. So really, win-win all around.

As I was iterating on some initial recipes I have made over the years, I needed to lean on my memories from those care-free summer nights. You know the ones. Ghosts in the graveyard when you were really young and having a sleep over with friends, sneaking out of your parents house for a night out in high school, or now, a relaxing hypnosis of getting lost in the red, orange and blue flames, surrounded by great people and great music. To make this dough right and to capture all of the essence of my trips down memory lane, I really wanted 3 things to be true with this dough:

  • It needed to be graham forward. Graham is a subtle, but essential flavor of what makes a S’mores so cravable, it brings most of the salt to the party (and we all know salt is flavor), and perfectly kisses the Sammie with honey. Now honey is subtle as well, but it is there. Then there was the texture of a bit of sandiness. I think this absolutely clears the bar on graham flavor. We ground graham crackers directly into the dough and you even get a few marshmallows that will have this incredible graham caramelization on the outside that is just the icing on the cake.
  • The chocolate had to shine through – although by volume, it actually is the smallest percentage of the sandwich, it adds a beautiful texture and flavor that is a marque of a good S’mores. It’s a good thing we already make a chocolate chunk and it’s a good thing we sorted through 100’s of chocolates to land at the best, because we use the exact same chunk. If you’ve been around long enough, you know chips don’t make the cut around here, especially when were talking S’mores. You don’t just get a chip here and there, you get pooling of chunks spread throughout each bite, just like a S’mores
  • And the Marshmallows had to *SHINE*. Google a picture of a S’mores…I’ll wait. You see what I mean? It is basically 50% of the sandwich. It is the lead singer, the main character, it’s everything that makes the Sammie such a simple delicacy. And if you are a S’mores conneseuir like me, you know golden brown deliciousness (GBD) takes time. No burnt marshmallow bits here – the marshmallows melt into the dough at the perfect rate to leave them gooey, just like you have them on the real thing.

Just by the ingredient panel alone, I hope you realize just how serious I am about texture, taste, and experience in each of our cookies. The ratios need to BE THERE. I’ve seen other cookie brands use white chocolate chips in place of marshmallow…like what?! They trying to pull a fast one on us? No, no, no…not here at BAKR. We are proud of our ingredients – even to go as far as highlighting them on our packs and we are even more proud of the cookies we put out in the world. These cookies are a croud favorite and will surely impress. I fancy myself a fresh baked girl – there’s not a lot that can top a little something sweet coming right out of the oven, especially if we’re talking cookies. BUT, these cookies may even be better when you allow them to cool completely. Something about the way the marshmallows set up just leaves the best texture and one that is midway through ooey gooey and chewy. It’s incredible.
